fieldguide: an easy 10 min egg arugula sandwich



I'm not usually one for cooking, I'm mostly just into eating. But recently I've started making these 10 minute egg and arugula sandwiches and now I can't stop! I eat them all. the. time. They're so deliciously flavorful and so gosh darn quick and easy, I just might be a brunch convert. Here's how you make them....

Recipe: Open-faced Bacon Egg Arugula Sandwich (makes 2)

You'll need:

2 eggs
2 pieces of bread
1 minced garlic clove (Trader Joe's has these awesome frozen ones, which I use.) or 1 dash garlic powder
2 Tbsp mayo
1 cup arugula
1 tsp olive oil
1 pinch of salt
1 pinch of pepper
6 slices of microwavable bacon (Optional, but yeah, I'm that girl.)


Throw the pieces of toast into the toaster/toaster oven, so you have them ready to go. I use whole wheat sliced bread, but anything works. While the bread is toastin', mix the mayo and clove of garlic (or garlic powder) together. Once the bread is finished toasting, spread the garlic mayo on one side of each bread slice.

*Optional: Cook the microwaveable bacon as directed on the package. (I'm too scared of the fat jumping up and burning me to cook my own slices.) Put three slices of bacon on the mayo side of each bread slice.

Then, toss the arugula with the olive oil, salt, and pepper until it is evenly coated. Divide the arugula in half and place each portion on top of the mayo side of each toast.

Spread a little olive oil onto a small skillet and place the pan on medium-high heat. Crack the eggs into the skillet, cooking one at a time for 2-3 minutes a piece. The egg white should be solid but the yolks should be slightly runny. Season eggs with a dash of salt a pepper, then slide them onto the bed of arugula.

VoilĂ  ready to eat! No shame, I eat both of the sandwiches, but you can share the other one with a friend...or not. I'm anxious to try it with avocado too! If you have any super easy, quick, and delicious recipes I'd love to test them out and share them.
